SIMPLE • FRESH-MILLED • FAMILY FAVORITE

These are the kind of biscuits we love most—simple, buttery, and made to be shared around the table. Soft, flaky, homemade biscuits made with freshly milled wheat and simple ingredients. Perfect for breakfast, alongside dinner, or warm from the oven with butter and honey.

Wheat Berry: Soft White

What You'll Need: 
- 256 Grams of Soft White Wheat Berries (or 2        Cups of All-Purpose Flour)
- 1 Tablespoon Baking Powder
- 1/4 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1/2 Cup Butter 
- 1 Cup Whole Buttermilk
- An Extra 2 Tablespoons for the skillet

Let's Make Them:
 

  1. Preheat oven to 400°F.

  2. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. Using a cheese grater, grate the cold stick of butter directly into the dry ingredients. Gently toss the grated butter with the flour mixture until evenly distributed.

  4. Make a well in the center and pour in the cold buttermilk. Gently stir or fold until everything is just combined. Don't overmix. The dough should be soft, moist, and a little sticky—that's exactly what you want for drop biscuits.

  5. Place about 2 tablespoons of butter in a cast-iron skillet and allow it to melt, coating the bottom of the skillet.

  6. Using two spoons or a large cookie scoop, drop portions of biscuit dough directly onto the melted butter.There's no rolling, kneading, or cutting required.

  7. Bake at 400°F for about 15 minutes, or until the biscuits are golden brown and beginning to crisp around the edges.
